Delicious Spring Dish: Garlic Chive Pancakes

I visit Seosan once a month, and I always stop by the traditional market for the fun of it.
Today, thanks to a grandmother selling wild greens on the street, I brought home some garlic chives.
The scent of the chives was delightful throughout the journey.
Cleaning the garlic chives is quite a task.
It took a long time as I had to peel each one individually.
I always make sure to purchase garlic chives when I visit Seosan around this time of year.
This holiday season, I prepared garlic chive pancakes for my guests, and they were a hit!
Garlic chives are among the first spring greens to be enjoyed.
Their sharp, spicy flavor and aroma stimulate the appetite.
They are versatile, used in salads, pancakes, sauces, and soups, and are rich in vitamins and minerals, making them a healthy choice.
Seosan produces about 60% of the garlic chives in South Korea, yielding 50 to 60 tons annually.
Seosan garlic chives are recognized for their high quality and were the first in the country to receive a geographical indication registration.
Prepare the shrimp by removing the insides and cutting them up.
After cleaning the garlic chives, chop the shrimp, mix with flour, and fry until golden brown to make delicious garlic chive pancakes.
Combine garlic chives and shrimp with a little alcohol in the batter.
I heated the pan and spooned the mixture in, frying them up.
It's the day before the holiday, and I've been frying pancakes for five hours.
Although it's late and I want to taste them, I held back.
After 5 PM, I'm on intermittent fasting, so I couldn't even sample them.
