I visited the 'Gwangcheon Fermented Shrimp Paste Promotion Exhibition Hall,' where I could easily and enjoyably learn about the history and stories of the fermented shrimp paste.
From the birth of shrimp paste to the secrets of its deep flavor, let me vividly introduce this beneficial place!
The exhibition hall has ample parking space, making it convenient for visitors.
So, what is shrimp paste?
Shrimp paste is a traditional Korean condiment made by fermenting fresh shrimp with salt.
Among the many types of fermented seafood consumed in Korea, it is one of the most popular and widely consumed, alongside anchovy paste.
Shrimp paste is characterized by its clean yet rich umami flavor!
It is loved as a natural seasoning for various Korean dishes due to its low fat content,
and it is especially essential for making 'kimchi,' a significant part of our dining culture and family gatherings.
Interestingly, the shrimp used for making shrimp paste are specifically referred to as 'jeot-saeu,' distinguishing them from regular shrimp.
Unlike the larger shrimp we grill, these are much smaller and have very thin shells, making them ideal for fermentation.
There are various types of jeot-saeu, including medium, small, and tiny shrimp, and in some inland areas, freshwater shrimp are used to create uniquely flavored shrimp paste!
So, why has Gwangcheon's fermented shrimp paste become so famous among many regions?
It all started with an incredible idea from a man named Yoon Byeong-won in 1949.
With valuable experience from working in a gold mine, he noticed the cool atmosphere inside an abandoned cave.
He conducted a groundbreaking experiment by storing shrimp paste in the cave, discovering that it could mature perfectly without spoiling, unlike in regular spaces.
This led to the preservation of the fresh taste and form of shrimp paste for a long time, creating a natural secret.
As word spread, the residents of Gwangcheon began excavating caves using only human labor and simple tools, eventually establishing the renowned 'Gwangcheon Fermented Shrimp Paste' brand recognized throughout Korea.
Due to its unique history and traditional value, it was officially designated as 'National Important Agricultural Heritage No. 15' on November 29, 2024.
Today, there are over 40 mysterious caves in the Gwangcheon area, and 107 specialized stores continue this tradition vibrantly.
The exhibition hall also showcases the aging process of Gwangcheon shrimp paste!
The aging process involves maintaining a temperature of 14-15℃ and 85% humidity year-round, with no electricity or fuel used.
Visitors can enjoy a visually engaging experience while walking through the well-decorated exhibition hall.
Gwangcheon is also famous for its crispy and savory 'Gwangcheon Seaweed,' making it a great place to experience both specialties at the annual festival held in October.
