Experience the Joy of Making Basque Cheesecake

During the last vacation, I attended a cooking class to make financiers.
This time, I joined a one-day class to make Basque cheesecake.
Originally, it was hard to come during weekday afternoons, but now the class has been moved to Saturdays.

It’s right in front of Olympic Park Foreon.
Basque cheesecake is a dessert originating from the Basque region of Spain, baked briefly at a high temperature, resulting in a caramelized dark brown exterior and a soft, creamy, moist interior. Unlike regular cheesecakes, it is not baked slowly at a low temperature but rather at a relatively high temperature for a short time.
Ease of preparation: It’s quite easy to make since you pour the batter into a mold lined with parchment paper without making a bottom crust. After baking, letting it mature in the refrigerator will enhance its softness and moistness.
This place is called Gangdong Sumpteo, which I believe is similar to a senior center.
It’s a cultural center for people over 60, offering various classes, and signing up is said to be quite competitive.
On the 3rd floor is Back to Cafe!
The coffee prices are reasonable, and the view is wide open.
A cafe mocha costs 3,000 won!
Even if the heart shape is a bit off, this place is enjoyable!
When we arrived, the teacher had everything prepared for us.
This time, there were only two teams, including us, so it felt very cozy as we chatted away.
At Back to Cafe Gangdong Sumpteo, you just need to pour and mix all the ingredients. In fact, the hardest part was softening the cream cheese. It got easier when I pressed and pushed it outwards.
Adding sugar helped it mix better, but I was struggling a bit.
Once everything was mixed and stirred well, make sure there are no lumps!
If it’s not working out, use a whisk!
Instead of using a piping bag, I poured the mixture directly from the bowl into the mold.
The mold is a 12 cm one from Daiso.
Basque cheesecake recipe:
150g cream cheese
50g sugar
50g egg
2g vanilla extract
12g cake flour
2g lemon juice
Bake at 240 degrees in the oven.
While it was baking, the teacher gave us a taste of what she had made yesterday.
It was a luxurious dessert without any greasiness!
After opening the lid to let steam escape and refrigerating it, it was not too sweet and incredibly delicious the next day.
If fresh cream is expensive, you can use Greek yogurt instead.
If you don’t have an oven, you can use an air fryer at 240 degrees!
The atmosphere here is warm, and the teacher is wonderful.
