A Perfect Spot for Jeju's Hamdeok Meat Noodles

Jeju's Hamdeok Meat Noodles at Banggyu's Meat Noodles is the perfect place to stop after some water activities!
I had planned to hike up Hamdeok Seoubong early in the morning, but I decided to search for a famous meat noodle restaurant in Jeju first, because, as they say, you need to eat before climbing!
The broth, simmered for hours in a large cauldron, along with the owner's secret recipe, was perfect for a drink right from the morning.

1. Banggyu's Meat Noodles: A Local Favorite
As soon as I entered, I was overwhelmed by the sight of a gigantic cauldron. The rich, milky broth was bubbling away 24 hours a day.
The broth, lovingly crafted by the owner, transforms into delicious meat noodles. You can taste the depth of flavor that comes from simmering bones without any artificial additives.
The restaurant had a stylish black and white sign, and even though it was early, locals were already seated inside.
This confirmed my belief that this is indeed a well-recognized spot for Hamdeok meat noodles among the locals. They even have dedicated parking, which is rare and very convenient.
There were bar-style seats for solo travelers and spacious tables for families. A self-service bar was also available for side dishes.
Especially impressive was the cleanliness; not a drop of broth was out of place. They even had utensils for children, showing attention to detail.
The interior was much larger and more comfortable than it appeared from outside, with large windows letting in warm light that illuminated the wooden tables.
2. A Feast at Banggyu's
The Hamdeok meat noodles were served with a milky broth topped with garnishes, resembling Seolleongtang. The thick slices of boiled pork looked like flowers blooming in the bowl.
The pork was cooked by the owner every morning, with a chewy exterior and a tender, melt-in-your-mouth interior that harmonized perfectly with the broth.
The fresh kimchi and perfectly cooked diced radish complemented the rich flavors of the meat noodles, making them the best partners. I lost count of how many times I refilled them!
Unlike other places that use strong pepper to mask the meat's smell, here the pure nuttiness of the broth caressed my taste buds.
Taking my first sip of the broth, I felt a warm sensation deep within me, even alleviating the hangover from the previous day.
3. Don't Miss the Dombae Sundae Set
The Dombae Sundae Set includes Makchang Sundae and Dombae meat, showcasing the essence of Jeju's flavors in one dish.
My friend remarked on the set's value, saying, "With this quality at this price, it’s beyond value for money!"
Each bite of the pork released a burst of rich broth, and pairing it with chives brought out a surprising sweetness.
The bibim noodles, mixed with a sauce and topped with bean sprouts and lettuce, provided a refreshing contrast to the heavier meat dishes.
The pork was reminiscent of eating ribs wrapped in bibim naengmyeon. The sauce was neither spicy nor overpowering, allowing the natural sweetness of the fruits to shine.
4. Unique Sourness of Bibim Noodles
My friend joked, "Tomorrow morning when I wake up, I’ll be thinking of these bibim noodles and rushing back to Hamdeok!"
The flavors at Jeju's Hamdeok Meat Noodles are primal and unmatched, akin to Michelin-starred dishes. A tip for enjoying it best is to add some spicy sauce.
The dish continued to bubble on the table, and each time I scooped with my spoon, the dense ingredients kept rising.
The sundae, soaked in the hot broth, burst with juicy goodness as soon as I bit into it, while the soup boasted a deep flavor from the cauldron broth that made it irresistible.
5. Side Dish of Stir-Fried Intestines
The stir-fried intestines emitted a delightful smoky aroma upon arrival. The spicy seasoning was quickly cooked over high heat, preserving the natural flavors of the ingredients.
The intestines were not at all fishy but rather rich and nutty, showcasing the owner's meticulous cleaning and preparation.
As soon as guests left, the staff swiftly cleaned and sanitized the tables, demonstrating why this place is famous for its service in Hamdeok.
The owner's generosity ensures that anyone who finishes a bowl will feel an overwhelming sense of satisfaction.
