As the scorching heat of summer begins, there's a dish that naturally comes to mind: ginseng chicken soup, or samgyetang. This dish has evolved beyond just a meal to a health-boosting delicacy that many intentionally enjoy. A place that has truly changed my perception of samgyetang is Herbalist's Ginseng Chicken Soup, a renowned restaurant in Gwanghye-won, Jincheon County.
Located between the National Representative Village and the Administrative Welfare Center in Gwanghye-won, this restaurant offers a stunning view overlooking Guam Reservoir. It opens at 11 AM and operates until 8 PM, with a break time from 2 PM to 5 PM, and is closed every Monday.
Upon entering the restaurant, you're immediately greeted by signatures of famous personalities adorning the walls, a testament to its popularity and recognition. It was even awarded a certificate for excellence in hygiene and safety at the Food Safety Day event held in Jincheon County this year, adding to its credibility.
Inside, the restaurant is surprisingly spacious with many tables. The seats by the window, which provide a panoramic view of Guam Reservoir, are particularly sought after. Just imagining a warm bowl of herbal ginseng chicken soup while gazing at the open landscape is truly soothing.
The main offerings include ginseng chicken soup with cordyceps and shiitake mushrooms, as well as half chicken soup. For dishes that include mushrooms, abalone, and octopus, reservations are required. I opted for the half chicken soup with shiitake mushrooms, a dish I frequently enjoy.
The half chicken soup arrives bubbling in a stone pot, exuding a sense of healthiness. The clean side dishes and the restaurant's unique flavorful salt are also noteworthy.
Until recently, I wasn't a fan of samgyetang; the sight of a whole chicken was off-putting. I would only eat it reluctantly because others enjoyed it. However, the first time I finished a whole bowl of samgyetang by myself was at Herbalist's Ginseng Chicken Soup, and it completely captivated me. The broth is incredibly light and savory, making it delicious. The tasty broth encourages you to enjoy the chicken without hesitation. Even those who typically dislike samgyetang will surely be won over by its flavor!
If you find yourself needing more side dishes, you can refill them at the self-service bar. My favorite side is the spicy pickled peppers, which are so addictive that I always end up refilling them.
