Refreshing Cabbage Water Kimchi & My Hurom Journey


Once you taste this cabbage water kimchi, everyone keeps asking for the recipe!
I've even gone to teach people in person, and...
...given text-based lessons to friends overseas!
This recipe is so satisfying, and it works just as well with bok choy or young summer radish.
The elders love it too!
They keep asking me to teach them, but honestly, it's so simple...
The only addition to my previous cabbage water kimchi recipe is dried seafood + kelp broth.

First, for pickling the bok choy, please refer to the explanation below~~!
Bok Choy Pickling (for 2 bunches):
Boil water, then add coarse salt until it tastes quite salty.
(Approximately 150~170g of salt per 1L of water)

Trim the bok choy slightly at the root to remove any impurities, and wash thoroughly under running water. Be gentle!
Cut in half or use whole, depending on the size.
✔️Pickling
In a large bowl or container, place the bok choy with the leaves facing up and the thickest part tilted downwards. Pour the boiling salt water evenly over them, tilting the leaves so they don't pickle as much.
Place a heavy plate or lid on top to submerge the bottom part of the bok choy in the salt water.

✔️Time
Pickle for about 1~2 hours, until the stems are slightly soft and the leaves are bendable. Then, pickling is complete.
✔️Rinsing
Rinse the pickled bok choy 2~3 times in cold water to remove the salt, and drain in a strainer.
Don't squeeze too hard! The bok choy will become mushy instead of crunchy.

I bought the Hurom 410 and loved it so much that I posted a 'my own money, my own purchase' review on my blog.
That post was reposted on the official Hurom blog, and I was selected as the third Best Friend Chemist.

Perhaps because I've gotten busier... That's my excuse.

Every time I complete a mission, my points accumulate.

I always use Hurom machines, but I'm just using them for my own satisfaction.

I'm just happily, healthily, and conveniently using it myself,
But I have a voluntary mission to share my experiences with people!

The apples and pears were so big that I felt it was a waste to just eat them, so I decided to use them in water kimchi!

The water kimchi is crunchy, refreshing, and sweet and sour.
It's so delicious that it's a rice thief! My child said,
"There's no kimchi in the world as delicious as this!"
I hope you try it and succeed.
Making Dried Seafood Broth
Put kelp the size of A4 paper and dried seafood - squid? or dried pollock heads.
Simmer well.
Boil until 3 liters of water is reduced to 3/4.
No need to cool it, just boil it while pickling the cabbage and then turn off the heat.

Extracting Fruit and Vegetable Juice with Hurom
1/2 apple
1/2 pear
1kg radish
2 onions
2 red bell peppers
About 20 cloves of garlic
1 bowl of cooked rice
Prepare!

Extract the above ingredients with the Hurom.
Be sure to store the radish, bell pepper, onion, and garlic pulp separately.
We will mix it into the broth later.
Instead of bell pepper,
You can substitute with 5 red chili peppers.
Instead of Flour Paste, Use 1 Bowl of Rice!
You can grind the garlic or extract it directly with the Hurom.
Add kelp broth or juice extracted with the juicer to one bowl of rice.
Blend well.

Mix all the liquids together.
Add 1 tablespoon of salt
Add 2 tablespoons of plum extract
Add 2 tablespoons of fish sauce and mix.
Ferment Overnight! That's it!
Add sliced onions and radish.
Add two bunches of pickled bok choy and mix.
Leave it in a warm place for a day.

The next day, put it in the refrigerator and let it mature at a low temperature.
There's no way to fail!!
If you do it once and then do it again, you'll completely conquer water kimchi!!
