Bonghwa Apple Pancakes
During my visit to Bonghwa, I stopped by a local food store in Gyeongbuk Bonghwa.
As soon as I entered the store, I was greeted by a variety of local foods.
When you think of Bonghwa, the first specialty that comes to mind is the apple!
Do you know why Bonghwa apples are so famous?
Bonghwa is located at an altitude of over 400 meters, which means it has plenty of sunlight.
Most importantly, the temperature difference between day and night is significant here.
This temperature variation helps the apples develop a firm texture and increased sweetness.
That's why Bonghwa apples are known for their crispiness and excellent storage quality.
After all, they're famous because they taste great!
I bought a bag of freshly picked apples from the store.
When I got home, I washed one and took a bite; it was sweet and crunchy even on its own.
With their high sugar content and beautiful appearance, they are delicious just peeled, but I decided to enjoy them in a different way.
Enter the apple pancakes!
This is a brunch menu that can be whipped up quickly in a frying pan without an oven.
🍏 Bonghwa Apple Pancake Recipe
Main Ingredients: 2 Bonghwa apples
Batter: 1 cup all-purpose flour, 3 eggs, 1 tablespoon sugar, a pinch of salt, a bit of cinnamon powder, 40ml cooking oil (or butter)
If you have store-bought pancake mix, feel free to use it!
1. Prepare the apples
First, remove the seeds from the washed apples and slice them thinly.
The thinner you slice the apples, the quicker they cook and blend better with the pancake.
If you want to keep the apple's crisp texture, you can slice them a bit thicker.
I was hungry, so I sliced them as thinly as I could for faster cooking.
Once the apples are ready, it's time to make the batter.
2. Making the batter
In a bowl, combine the flour, eggs, sugar, salt, cinnamon powder, and cooking oil.
Here's the twist:
Grate half of one apple and add it to the batter.
This reduces the need for added sugar and infuses the batter with the unique aroma of Bonghwa apples, giving it a more refined flavor.
You can also add nuts or raisins according to your preference.
3. Adjusting the consistency
Mix the batter well.
The consistency should be slightly thick but flow easily when scooped with a ladle.
4. Layering the apples in the pan (low heat is a must!)
Arrange the sliced apples neatly in the pan.
Cook the apples on low heat for about 2 minutes while preheating the frying pan.
5. Pouring the batter and cooking
Carefully pour the batter over the apples.
You can cover the apples completely, but if you want the apples to be the star, pour just enough to let the edges show.
After pouring the batter, be sure to cover the pan with a lid.
This creates an oven effect, cooking it thoroughly and keeping it moist.
If the apples are thickly sliced, wait for over 10 minutes; I used thin slices and waited about 7 minutes before flipping it.
6. Flipping and finishing
The most thrilling moment: flipping!
If it's nicely browned, flip it over, cover again, and let it cook for another 5 minutes.
And there you have it: Bonghwa Apple Pancakes!
They turned out quite well, don't you think?
The apples caramelized beautifully on the surface, adding a lovely shine.
Even though I'm not a great cook, I managed to make this easily.
The simple ingredients made me wonder if it would taste good, but the quality of the apples ensured it was delicious.
The rich sweetness of Bonghwa apples melted into the pancake, making it truly delightful.
Cutting it into slices like a pizza made it perfect for sharing.
Pair it with warm coffee or milk, and it's like having a café at home!
