Exploring Local Flavors at Chulgapsan Restaurant in Cheongyang

Chungcheongnam-do's Cheongyang County, known as the 'Alps of Chungnam,' boasts stunning natural scenery. However, the true strength of Cheongyang lies in its honest agricultural products, nurtured by clean air and pure water, which embody the essence of 'local food.' The local food movement aims to reduce distribution stages, enhance freshness, lower carbon emissions, and ensure income for local farmers, creating a model of mutual benefit.
Recently, I visited a place that genuinely realizes the value of local food: the 'Chulgapsan Restaurant' located at the foot of Chulgapsan in Daechi-myeon, Cheongyang County. Officially designated as a local food restaurant in 2022, this establishment transcends mere dining to encapsulate the future of the region.
To avoid the weekend rush, I visited the 'Chulgapsan Restaurant' on a weekday afternoon, and it exuded an overwhelming presence from the entrance. The numerous jars filling the restaurant's courtyard silently testified that this is not just a place to sell food but a place where flavors are crafted with time and care. The aroma of homemade gochujang, doenjang, and soy sauce blends with the clear air of Chulgapsan, calming the hearts of visitors.
At the entrance, a plaque proudly displays 'Designated Local Food Restaurant 2022.' This signifies that Cheongyang County guarantees the origin and quality of its raw materials, providing consumers with a level of trust stronger than any advertisement. Along the path to the entrance, traditional sauces branded under 'Chulgapsan Tteurak,' as well as makgeolli, acorn jelly, and dried jelly made from local produce, were displayed, showcasing the restaurant's role as a promotional hub for local specialties.
Once seated, I ordered the signature dishes: mountain vegetable bibimbap and cheonggukjang. True to its local food designation, every ingredient on the table came from the mountains and fields of Cheongyang. The mountain vegetable bibimbap was a 'watercolor-like dish,' beautifully arranged with seasonal vegetables such as bracken, wild chives, and bellflower roots, each retaining its unique flavor. Instead of masking the natural tastes with strong seasonings, the dish highlighted the textures and aromas of the vegetables through minimal cooking. A spoonful of gochujang and a drizzle of the restaurant's pride, perilla oil, completed the dish, allowing the four seasons of Chulgapsan to unfold in each bite.
The cheonggukjang was the highlight of the meal, showcasing a depth that set it apart from commercial versions. Made from locally grown soybeans, it presented a milder pungency while maximizing the nutty flavor of each soybean. The clean and light broth offered a taste of 'time and care' that artificial seasonings could never replicate.
After the meal, I revisited the local food sales area set up within the restaurant. Fresh mountain strawberries were available at a fair price of 15,000 won per pack, while crispy nurungji and traditional sauces made from local ingredients attracted the attention of visitors.
I purchased some crispy nurungji and fresh mountain strawberries for my child, extending the joy of the restaurant experience into my home. Such purchases go beyond mere transactions; they provide stable markets for Cheongyang farmers and contribute to a virtuous cycle in the local economy.
Insisting on local food is a labor-intensive commitment for restaurants, as it requires verifying local farms and sourcing fresh ingredients each season instead of relying on standardized supplies. However, 'Chulgapsan Restaurant' willingly embraces this effort to continue the tradition of 'Chulgapsan Tteurak.' This dedication allows residents to dine with confidence.
In conclusion, 'Chulgapsan Restaurant' is more than just a place to fill your stomach for travelers seeking Chulgapsan; it is a space to savor the culture of Cheongyang. A meal of local food after the thrill of the Cheonjangho Suspension Bridge or a serene walk in Chulgapsan National Park signifies the completion of a journey. If you wish to fully experience the vibrant essence of Cheongyang and taste the healthy comforts of our land, I highly recommend heading to 'Chulgapsan Restaurant,' where genuine 'our taste' awaits, crafted by honest people.
