Weekend Food Therapy: 8 Delicious and Healthy Korean Side Dishes for Your Table

This weekend, I indulged in some food therapy by making eight healthy and delicious homemade side dishes (banchan).
During the week, we're often too busy to eat properly, sometimes even buying ingredients only to let them sit.
But on a precious Saturday with no plans…!
What side dishes should I make this weekend?
The smell of oil and herbs wafting from the kitchen instantly relaxes me.
Today is food therapy time, creating homemade side dishes for myself and my beloved family!
I lovingly prepared eight banchan that will joyfully fill our bellies.
Here are the 8 side dishes I made:

1️⃣ Braised Quail Eggs (Metchurial Jangjorim)
Chewy quail eggs and tender pieces of meat, infused with slightly spicy chili peppers and a savory soy sauce glaze. One spoonful with rice brings pure happiness.

2️⃣ Stir-fried Dried Anchovies (Myeolchi Bokkeum)
Crispy stir-fried anchovies with added garlic for immunity boost and a touch of spiciness to stimulate the appetite.
A great source of calcium, too!

3️⃣ Stir-fried Zucchini (Hobak Namul)
Softly stir-fried zucchini with a subtly sweet flavor and the gentle aroma of sesame oil warms you from the inside out.

4️⃣ Seasoned Eggplant ( 가지나물 Gaji Namul)
Lightly steamed eggplant seasoned with onions, chili peppers, red pepper, soy sauce, minced garlic, and sesame oil for a melt-in-your-mouth texture.

5️⃣ Seaweed Salad (Miyeok Choomuchim)
Seaweed tossed in a sweet and sour sauce awakens the appetite, especially in the summer.
A unique side dish that helps purify the blood and relieve fatigue.

6️⃣ Seasoned Dried Seaweed ( 마른김 촉촉하게 무치기 Mareun Gim Chochokage Muchigi)
Crispy seaweed moistened with a little water and seasoned with sesame oil and soy sauce for double the savory flavor. A total rice thief!

7️⃣ Onion Kimchi ( 양파김치 Yangpa Kimchi)
Crunchy onions tossed in kimchi seasoning create a refreshing taste!
Adds a zesty flavor to your summer table.

8️⃣ Sweet Potato Stems Kimchi ( 고구마줄기 김치 Goguma Julgi Kimchi)
Blanched sweet potato stems, rich in fiber, combined with onions and seasoned with fermented shrimp and sand lance sauce for a crunchy and deep flavor.
