Ingredients
1 head of cabbage (2.5kg)
1 cup of salt (200ml capacity)
100g of scallions
2 small onions (250g)
- Kimchi Seasoning -
10T Gochugaru (Korean chili powder)
6T Fish sauce
3T Crab sauce
1T Salted shrimp
3T Plum extract
1T Ginger syrup
1T Sugar
2T Minced garlic
Sesame seeds
- Measurement -
1T = 15ml = approximately one and a half tablespoons
1. Cutting the Cabbage
Cut the cabbage into quarters
Remove the core in the center
Separate each quarter into three sections for easier cutting.
Then cut into bite-sized pieces.
2. Salting
Separate the layers of the cabbage and sprinkle salt between them.
Let it sit for about an hour.
It's good to flip it over halfway through.
※ When salting in salt water, add one cup of salt to 1L of water and soak for 20 minutes.
I salted it directly with salt, but cabbage kimchi is best salted evenly in salt water because it is so thick! Keep that in mind!
3. Preparing the Additional Ingredients
Scallions and onions are essential,
The apple is optional.
Cut the scallions into 4-5cm lengths,
Slice the onion
Remove the seeds from the apple and cut it into pieces.
4. Making the Kimchi Seasoning
10T Gochugaru, 6T Fish sauce, 3T Crab sauce
1T Salted shrimp, 1T Ginger syrup, 3T Plum extract
2T Minced garlic, 1T Sugar
Mix well.
Taste and add more seasoning as needed.
5. Rinsing and Draining
Well salted, right?
Rinse lightly in water and drain.
6. Making Cabbage Kimchi
Add 2/3 of the seasoning to the drained kimchi ingredients.
Mix well.
Make sure it gets in between the cabbage layers.
Add the additional ingredients and the remaining seasoning.
Mix well.
Sprinkle with sesame seeds to finish!
