Cucumber Kimchi
Ingredients
Seasoning: Salt (bitterness removed)
Fermented Shrimp (Yukjeot)
Sand Lance Fish Sauce (Kkanari Aekjeot)
Gochugaru (Korean Chili Powder), Plum Extract, Sugar
Garlic, Ginger
Personally, I don't like chunks,
so I grind everything and mix it.
Other ingredients: Cucumber, Chives, Green Onions
Since the cucumbers need to be sliced before eating anyway,
I slice them into bite-sized pieces from the start.
It's also easier to mix.

The cucumbers are exceptionally fresh too!
The bitterness-removed salt is top-notch.
I bought another 20kg of Shinan coarse salt.
I'll remove the bitterness again and use it later!

Mom starts preparing the vegetables, a labor-intensive task, in the living room.
My incredibly meticulous mom
is in her 8th year of dementia.
It's heartbreaking.
She started with the cognitive support grade
and then grade 5, and
now she's at grade 4.
She goes to a nursing home daycare
every day.
Think of it like kindergarten for children.
Originally shy and girlish, my mom
always helps with even the most labor-intensive tasks
with a smiling face, never complaining.
She's always consistently helpful.
Her personality is meticulous, so the prepared vegetables
are so clean you don't even need to wash them.
Thanks to that, she's a bit slow, haha.

But thanks to her, I'm not scared of labor-intensive tasks at all.
Mom takes care of the chives, green onions, and garlic.
Thanks to that, it's much easier for me.
I slice and salt the cucumbers in the kitchen.
Mixing the seasoning.
After salting the cucumbers for about 30 minutes, I rinse and drain them.
I try them with the seasoning.
Ooh~ It's delicious!
Then I wash and drain the prepared vegetables.
Mix it all together and you're done!
Cucumber Kimchi is so easy! ^^
