With the weather being so hot, I want to share a noodle recipe that I often make and enjoy to cool down. It's a truly simple recipe for a refreshing meal!

All you need is a package of store-bought cold noodle broth (Naengmyeon broth) and some homemade cucumber kimchi (Oi Sobagi). It doesn't get any easier than this!

If you want to enjoy the clean taste of the broth, simply freeze the store-bought broth slightly and serve it with ice shavings. But if you want to enhance the flavor of the cucumber kimchi, add some of the kimchi juice to the broth for a more delicious taste.

The crunchy texture of the cucumber, the chewy noodles, and the cold broth make this dish incredibly refreshing!

I've been losing my appetite due to the heat lately, but a bowl of this Cucumber Kimchi Noodle Soup really brought it back. I even made another bowl right after finishing the first one!

I'm going to share this easy and simple refreshing noodle recipe with you!

Ingredients & Instructions (for 1 serving)

Basic Ingredients:

  • 110g rice noodles
  • 6 pieces cucumber kimchi (Oi Sobagi)
  • 6 tablespoons cucumber kimchi juice
  • 1 package cold noodle broth (Naengmyeon broth)

※ Based on a standard Korean rice spoon.

※ Difficulty: Easy

Instructions:

When I scooped up the cucumber kimchi, it came out to about 6 pieces.

Boil the rice noodles in boiling water for a total of 4 minutes and 30 seconds, then rinse them under cold running water.

Drain well after rinsing.

I froze the broth in the freezer for 2 hours.

Add 5-6 tablespoons of cucumber kimchi juice to the icy broth and mix well. The broth is now complete!

Place the well-drained noodles in a bowl, and pour all of the prepared broth over them.
