Peach Kimchi: A Surprisingly Delicious Summer Side Dish

Just a handful of chives added to sweet peaches...

An unfamiliar combination made with familiar ingredients:
“Peach Kimchi.”

My wonderful sister-in-law's parents sent us two boxes of precious Uiseong peaches, grown with love and care, all the way to Jeju Island.
To prevent them from spoiling in the hot summer, and because they are delicious even on their own...
I made compote to serve with Greek yogurt or bread as a summer snack for the kids, and
I picked out a few firm, ripe peaches separately to make a special side dish that can only be enjoyed this season:
Peach Kimchi.
The natural sweetness and crisp texture of the fruit combine with savory seasoning to create a dish that is
like a sweet and sour fruit kimchi, or
a single-bite salad—
a unique summer side dish.
It's a perfect match not only for freshly cooked white rice,
but also for summer delicacies like jajangmyeon (black bean noodles) and cold buckwheat noodles!
Refrigerate it for a cool and refreshing flavor, and you'll find yourself reaching for it
even when you have no appetite, making it a perfect summer dish.
Be sure to try making it with crisp, firm peaches that have ripened under the summer sun.
Ingredients:
3-4 firm peaches (can be used with the peel)
1 tbsp coarse salt
2 tbsp red pepper powder (gochugaru)
1 tbsp minced garlic
Pinch of ginger powder (optional)
1 handful of chives (approx. 50g, cut into 3cm lengths)
2 tbsp fish sauce
1 tbsp plum syrup (maesil cheong)
Overripe peaches are not suitable for kimchi because they tend to get mushy.
Use firm peaches.
If using the peel, wash thoroughly under running water and remove any fuzz.
Peach peels are rich in dietary fiber and antioxidants
(polyphenols and anthocyanins).
Cut the firm peaches into cubes with the peel on.
Sprinkle with 1 tbsp of salt and let it sit for about 10 minutes.
The seasoning will absorb better if some of the moisture is released.
Slightly drain the salted peaches.
Add red pepper powder, garlic, ginger, fish sauce, plum syrup, and chives.
Gently mix everything together!
The sweetness of the peaches and the subtle spicy flavor of the chives—
a combination that awakens the appetite.
It's delicious to eat right away, but the flavor deepens when aged in the refrigerator for 3-6 hours.
It is best to consume within 2-3 days.
