Bibim Kalguksu: Spicy Korean Mixed Noodles with Kimchi


Bibim Kalguksu (Spicy Mixed Knife-Cut Noodles)
I adapted Chef Jung Ho-young's "Kimchi Bibim Udon" recipe
and made it with kalguksu noodles!
This sauce is seriously delicious!
The touch of Worcestershire sauce is definitely the secret ingredient.
I reduced the amount of sugar slightly, and it was perfect for my taste!
For those of you who are busy, I've included a video at the end of this post.
Ingredients (for 3 servings):
1 T = Tablespoon
✅️ Ingredients:
450g Kalguksu noodles, ½ Cucumber, 4 leaves of well-fermented kimchi
✅️ Sauce:
3T Gochugaru (Korean chili powder), 3T Gochujang (Korean chili paste),
4T Sugar, 2T Vinegar, 2T Soy sauce,
0.5T Worcestershire sauce, 0.5T Black pepper, 1T Minced garlic, 2T Cider (or Sprite),
2T Kimchi juice, 2T Sesame oil, 2T Sesame seeds
*Worcestershire sauce can be substituted with Tonkatsu sauce.
If you don't have it, you can skip it.
Instructions:
First, let's make the sauce.
3T Gochujang
3T Gochugaru
2T Soy sauce
4T Sugar
2T Vinegar
0.5T Worcestershire sauce
0.5T Black pepper
1T Minced garlic
2T Kimchi juice
2T Cider
(You can also use grated pear juice)
2T Sesame oil
Mix well!

Now, let the sauce rest for a while.
Remove the stuffing from the kimchi and
cut it into long, bite-sized pieces.
I used kalguksu noodles, but
Udon noodles or
medium-thick noodles would also be good.
Boil the noodles in boiling water, loosening them well.

Rinse them in cold water to remove the starch.
Pour the sauce over the prepared noodles.
Don't pour all the sauce in at once.
Add it gradually, tasting as you go!
Add the sauce and
mix well!
Wow~ the color is amazing!!
My mouth was watering even while mixing!

Garnish with julienned cucumber,
sliced kimchi,
and a boiled egg, if desired.
Sprinkle with sesame seeds, and you're done!!
The secret ingredient to this bibim guksu sauce is
the small amount of Worcestershire sauce!
If you don't have Worcestershire sauce,
it's still delicious without it,
but if you have it at home, be sure to add it!
(It can be replaced with Tonkatsu sauce!)
The aftertaste is really sophisticated.
Before making it, I looked at the recipe and thought,
"Why would you add 0.5T of Worcestershire sauce?"
But after eating it, I understood!
My eldest son ate it and said it was
the most delicious bibim guksu he's had recently!
I also found it delicious and will make it often.^^
